Perfect for peanut butter lovers, this oversized individual cookie is a tasty treat that’s fun to make when you’re craving something sweet.
BAKE MODE:
Prevent your screen from going dark while you bake.
Preheat oven to 350°F (180°C).
Whisk together flour, baking soda and salt in small bowl.
Beat together peanut butter, butter, brown sugar and granulated sugar using handheld electric mixer in medium bowl until light and fluffy. Beat in egg yolk, vanilla and milk until blended. Stir in flour mixture just until incorporated. Stir in 2 tbsps (30 mL) peanut butter chips.
Roll dough into ball and flatten to 4-inch (10 cm) disk about 1/2-inch (1 cm) thick. Wrap in plastic wrap and chill in refrigerator for 10 minutes.
If desired, for extra peanutty flavor, beat 1 egg white until frothy in shallow bowl. Dip cookie dough disk in egg white until coated and roll in finely chopped peanuts at the end of Step 4.
Transfer cookie dough to parchment paper–lined baking sheet. Use thumb to create 2 1/2-inch (6 cm) round indentation in center of cookie. Fill with remaining peanut butter chips.
Bake for 15 to 18 minutes or until edges are golden and chips are set.
Let cool slightly before serving or let cool completely on baking sheet on wire rack.
