This fudgy cocoa brownie is dotted with lots of butterscotch chips for a quick and easy brownie baked just for one.

Prevent your screen from going dark while you bake.
Preheat oven to 350°F (180°C). Grease and line a 5 x 6 1/2-inch baking dish with parchment paper.
Alternatively, use 3-inch (7.5 cm) or 5-inch (12.5 cm) square baking pan or divide batter among mini brownie wells or mini muffin cups, adjusting bake time as needed.
Add butter and sugar to small microwave-safe bowl and microwave on HIGH in 30-second increments or until sugar is completely dissolved.
Whisk together flour, cocoa, baking powder and salt in small bowl.
Whisk together egg and vanilla in medium bowl. Add butter mixture and, using fork, stir until blended. Stir in flour mixture just until incorporated. Fold in 2 tbsps (30 mL) butterscotch chips.
Scrape batter into prepared baking dish; smooth top. Sprinkle with remaining butterscotch chips.
Bake for 10 to 12 minutes or until only a few moist crumbs stick to toothpick when inserted into center of brownie.
Let cool slightly in pan on wire rack.
For an over-the-top dessert for two, serve brownie with scoop of ice cream, dollop of whipped cream, drizzle caramel or fudge sauce and sprinkle with more HERSHEY’S Butterscotch Chips.
