Doughnuts: Whisk together flour, sugar, yeast, baking powder, nutmeg and salt in large bowl until combined.
To simplify, buy store-bought pizza dough and knead in 3 tbsps (45 mL) granulated sugar. Let rest for 10 to 15 minutes, then roll out to 1/2-inch (1 cm) thickness on lightly floured surface before cutting out letters.
Whisk together egg, milk, butter and vanilla in medium bowl until blended. Add egg mixture to flour mixture and stir until a soft dough starts to form. Turn out onto floured work surface.
Knead dough until smooth, about 5 minutes, then transfer to lightly oiled medium bowl.
Cover and let stand at room temperature for 45 to 60 minutes or until doubled in volume.
Turn out dough onto lightly floured work surface. Roll into 12 x 6-inch (30 x 15 cm) rectangle with 1/2-inch thickness. Using sharp paring knife, cut out 2 “D”s and 1 “A,” each letter about 4 inches (10 cm) tall. Reroll scraps, cut remaining dough into sections and roll into 1-inch (2.5 cm) round doughnut bites.
Fill large high-sided skillet over medium heat with 2 inches (5 cm) oil. Heat until instant-read thermometer registers 375°F (190°C). Deep-fry doughnuts in batches, turning once, for 2 to 4 minutes or until golden brown and cooked through. Transfer to paper towel–lined plate and let cool completely.
Glaze: Add 1/2 cup (125 mL) dark chocolate chips and 2 tbsps (30 mL) milk to small heatproof bowl; stir to coat. Microwave on HIGH for 30 seconds to 1 minute or until smooth. Whisk in icing sugar and remaining milk until blended and smooth.
Alternatively, use 3 1/2-inch (9 cm) “D” and “A” letter cookie cutters to make 4 “D” and 2 “A” doughnuts, rerolling scraps as needed.
If preferred, use a traditional doughnut cutter to make classic doughnut shapes, or cut small rounds and roll into doughnut “holes.”
Dip doughnuts in glaze, letting excess drip back into bowl. Sprinkle remaining chocolate chips over top. Arrange letters on serving platter to spell “DAD,” and serve with remaining doughnut bites and glaze for dipping.
